Schmaltz is the traditional fat used in matzo balls.
Matzo ball recipe easy. In a medium bowl, combine eggs and oil and mix together with a fork. However, in recent decades oil has become at least as common. To begin, combine the flour, salt and olive oil in the bowl of a food processor fitted with the steel blade.

Delicately drop the balls into the water using a spoon and once the water comes back to a simmer, reduce the heat to low, cover the pot and poach the balls for 15 minutes until the interior of the matzo ball is the same color as the exterior.
